Split Pea Soup (WFPBNO)

I have quite a few mason jars filled with dried beans and peas. Some of them have passed their best used by date and I decided it was time to get out the InstaPot and use the split green peas. I have never made a pressure cooked soup before but knew that the peas were sure to get soft using this method. This turned out so tasty in such a quick time. I will probably begin using the InstaPot more often for these types of dishes, especially ones using dried beans.

  • 4 cups water
  • 1 medium  sweet potato, diced
  • 1 cup split green peas
  • 1/2 cup dried split yellow peas
  • 1/2 sweet onion, chopped
  • 2 stalks celery, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 2 tablespoons dried parsley flakes
  • 1 teaspoon dried mustard
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon liquid smoke
  • 1/4 cup nutritional yeast


Add all of the ingredients except the nutritional yeast to the InstaPot. Stir well to mix. Cook on high pressure for 25 minutes. All pressure to release naturally.

Carefully removed lid and add the nutritional yeast and black pepper. Give it a good stir; if it's too chunky for you use an immersion blender to puree some of the veggies. 

Ladle up and serve with a side salad, bread, cracker, cornbread, etc.

Creamy Yellow Split Pea Soup (WFPBNO)

 I made this delicious soup in the Instant Pot. This is so delicious; I encourage you to get the ingredients and make a pot for the next few days as the temps are going to drop again. Makes 4-5 servings. The pictures are kind of dark since I was  not at the stove but at the countertop. If you don't have an Instant Pot you can make this on the stovetop. Follow the same directions but you will need to cook the soup for about 45 minutes for the peas to get tender.

Soup:

  • 1/4 cup water
  • 1 small sweet onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 1/2 teaspoon ginger, minced
  • 1 cup yellow split peas
  • 1 cup water
  • 2 1/2 cups vegetable broth
  • 3/4 teaspoon turmeric, grated
  • 1/4 teaspoon black pepper
  • 1/3 cup coconut milk (canned)
Garnish:
  • sweet potato, roasted, then cubed and toasted
  • 1 scallion, sliced


Turn Instant Pot to sauté and add 1/4 cup water while you chop the onion. Saute until onion begins to turn translucent.

Add ginger and garlic. Stir well and add more water if needed.

Turn Instant Pot off. Add peas, water, vegetable broth, turmeric and black pepper. Stir well.

Add lid and turn valve to sealing. Pressure cook on High for 15 minutes. Once time if up let the steam release naturally. This may take 15 minutes or so. Carefully open and stir.

Add coconut milk. Stir. Using an immersion blender puree soup until everything is smooth and creamy.

Garnish however you like. I used sweet potatoes and scallions. But you could pour a little coconut milk on top.

Split Pea & Sweet Potato Soup

We've been WFPBNO (whole food plant based no oil) since the end of last October, 2018. I feel better, have lost weight and will continue on this journey. I found a similar recipe on line and left out the oil and added salt and this was the result. Amazing flavor.

  • 1 box (32-ounce) low-sodium vegetable stock
  • 1 bag green split peas
  • 2 cups water
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 medium carrots, peeled and diced
  • 2 large stalks celery, diced
  • 1 teaspoon coconut aminos
  • 1/4 teaspoon garlic powder
  • black pepper


Place a large soup pot on medium heat. Add a couple of tablespoons water, diced onions and saute for 3-4 minutes stirring frequently. If pan starts to try add another tablespoon of water.

Add coconut aminos and give a good stir.

Add diced carrots and celery. Stir. Add garlic powder and a tablespoon of water at a time as needed to keep vegetables from sticking.Cook 3-4 minutes.

Add 1 cup of vegetable broth and stir well to be sure you get any stuck bits up.

Add sweet potato and mix well. Cover with a lid and allow the potatoes to cook about 5 minutes.

Reduce heat to low and add the rest of the broth, 2 cups of water, the peas and diced red pepper.

Cover and cook about 50 minutes, stirring occasionally, check to see if peas are done.
Enjoy!! Makes about 8 cups.
