Avocado & White Bean Wrap (WFPBNO)

Okay, these aren't the best pictures and I'm not going to lie it's hard to make mashed beans look attractive. But this is a delicious wrap. If I had spinach instead of iceberg lettuce it would have helped with the presentation. However, you have to make use of what is on hand. These wraps were very filling and would be good with a cup of tomato soup. 

  • 1 can (15-ounce) great northern beans, rinsed and drained
  • 1 tablespoon liquid aminos
  • 1 tablespoon white balsamic vinegar
  • 1 Haas avocado, halved
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped
  • 1 can (4-ounce) canned green chilies
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 2 large tortillas
  • 1 tomato, thinly sliced
  • Lettuce (or spinach)


Sauté beans in a large nonstick skillet for 1-2 minutes until warm. 

Add the liquid aminos and cook until it evaporates. Then add the vinegar and warm until it evaporates. Remove from heat and mash the beans.

Scoop the avocado pulp into a bowl and mash until it's smooth. 


Add the beans, lime juice,cilantro, green chiles, garlic power, paprika and onion powder.

Mix until combined well.

Spread h alf of the avocado mixture onto one wrap.

Add a row of tomato slices across the wrap. Then add a row of lettuce (spinach), another row of tomatoes and finally another row of lettuce.



Roll the wrap over the first row of tomatoes and continue rolling until it's all rolled up. Cut in half and enjoy!

Repeat process with the 2nd wrap.

Chickpea of the Sea Salad

 his is my infamous "tuna" salad. When I'm wanting a sandwich this is my go to filling. It's also delicious to eat as a snack with celery sticks or saltines. Another yummy light lunch is to take a large tomato and cut it into wedges and put a big scoop of this salad on top of it. Stuffed tomatoes for the win. I've made this salad for work lunches and no one could believe it wasn't tuna. I drain both relishes in a fine sieve and press it with the back of a spoon to get all the liquid out of it.

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 celery stalks, finely chopped
  • 1/4 sweet onion, finely chopped
  • 2-3 tablespoons dill pickle relish, drain and press
  • 2-3 tablespoons sweet pickle relish, drain and press
  • 2 teaspoons nutritional yeast
  • 1 tablespoon low sodium soy sauce
  • 4 tablespoons vegan mayo
  • 1/2 teaspoon kelp flakes
  • 1/2 teaspoon Old Bay seasoning

In a large mixing bowl, mash chickpeas with a fork until coarse and no whole beans are left.

Add the remainder of the ingredients to the bowl.

Mix well. Taste and add more pickle relish or onion, or however you like your "tuna" salad. I think this tastes better after sitting the frig for a bit to get good and cold.

As I mentioned one of my favorite ways to eat this is a sandwich with sliced tomatoes.

Breakfast Wrap

 These wraps hit TicTok and went viral all over the webs. You can use whatever you like and make these for breakfast or lunch/dinner. I made a tofu scramble with half a block of tofu that was hanging out in the frig. You need a large tortilla to make these, I suppose you could use a small tortilla, use less filling and eat more than one. Anyway, these are fun and yummy and you could get the kids involved. Ummm, maybe a peanut butter, jelly, banana, marshmallow dessert wrap would make a yummy and fun dessert.

  • sliced tomatoes
  • avocado
  • diced onions
  • 1/2 sliced jalapeno
  • 1 tablespoon soy sauce
  • 1/2 tablespoon smoked paprika
  • 1/2 teaspoon black salt
  • Daiya cheddar shreds
  • 1/4 sliced red bell pepper
  • lettuce
  • large flour tortilla
  • 1/2  block firm tofu, crumbled


Add bell pepper, jalapeno, and onion to a nonstick skillet. Add a tablespoon of water to keep things from sticking. Sauté until veggies start to soften, adding more water as needed.

Add crumbled tofu, spices and soy sauce. Cook until everything is hot.

Lay a large flour tortilla on a cutting board and slice from the center down.

In each quarter place your ingredients. I had the tofu scramble topped with a little cheese shreds in the lower left. In the upper left I mashed my avocado with a little salt and topped it with a slice of tomato. In the right upper corner I place lettuce topped with a little cheese and the final quarter I used salsa.

Fold the bottom left quarter up onto the top left quarter.

Now fold that over the top right quarter.

Finally fold that onto the lower right quarter.

Wipe out the same skillet and add the wrap over a medium heat to brown both sides.

Serve with extra salsa or sour cream, whatever you like.

This was a yummy way to have breakfast. Instead of just a burrito.

Chickpea of the Sea Salad

I loved tuna salad and this is the best replication I have. I like to make a sandwich with a thin slice of tomato and vegan mayo on homemade rye bread, YUMMM. This is also good as a snack on a cracker or as lunch on a salad. I can't believe I've not put this on the blog before since I've been making it for years. Anyway, enjoy!! Also let me state there is no way to make this look attractive in photos.

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 2 celery stalks, chopped
  • 2 tablespoon dill pickle relish, drained
  • 2 tablespoon sweet relish, drained
  • 3 tablespoons sweet onion, minced
  • 1 tablespoon nutritional yeast
  • 1 tablespoon low sodium soy sauce
  • 4 tablespoons vegan mayo (more if needed)
  • 1/2 tablespoon yellow mustard
  • 1/2 teaspoon kelp flakes
  • 1/2 teaspoon Old Bay seasoning


Put chickpeas in food processor.

Pulse until they are small crumbs, but be careful you don't want hummus.

Dump chickpeas into large bowl.

Add the remaining ingredients and stir well.

Eat in any of the recommended methods above and enjoy!!

Pimento Cheese Spread

I actually made this before we went WFPBNO. It was delicious. I probably wouldn't make it now since I'm doing my best not to eat processed food (the mayo, the cheese) and I'm limiting my salt, so probably no to the pickles (one of my fav foods) and pimentos. But if you are vegan and want to love on some pimento cheese this ones for you!
  • 1 block daiya cheddar, shredded,
  • 1 jar (4 ounce) diced pimento peppers, drained
  • 1/2-3/4 cup Just Mayo (you can add more if you want it more creamy, wet)
  • 1-3 Claussen mini dill pickles, diced (to taste)
  • 1 couple of dashes Frank's RedHot Sauce
  • a few grinds of black pepper
  • salt to taste

Add all of the ingredients to a medium sized bowl. Stir well and taste, add more pickle or mayo or whatever you think needs bumping up.

I added an extra dash or two of Frank's. Cos' I really do put that s**t on everything!

Serve on crackers, or make a pimento cheese sandwich. It would also be a great addition to a grilled cheese sandwich!!! Enjoy!

Italian Sausage with Bell Pepper & Onions

I love Field Roast Italian Sausages. They are so flavorful and can be used so many different ways. Yesterday I decided we were going to have them in a sandwich (reminds me of fair food) with some tater tots on the side. Oh my gosh! These were amazing. They were also very quick to make. I would prefer to use a red bell pepper but the green one was all I had. Next time, red bell it will be!!!
  • 2 Field Roast Italian Sausage
  • 1 bell pepper, sliced
  • 1/2 sweet onion, sliced
  • whole wheat hotdog buns
  • yellow mustard

Saute onions 4-6 minutes until they begin to brown a little.

Add bell pepper and continue to saute about 5 more minutes.

Add sausage and turn every minute or two until they are browned on most sides.

I like to use yellow mustard, just squirt it on the bun, add sausage and veggies. Then top with more yellow mustard.

Serve with tater tots or fries.

Corn Dog Muffins

Vegan corn dogs!!! These tasty little bites make for a great snack or lunch/dinner. Fix some fries, a salad, or serve alone for a snack. I made these using my favorite frankfurter, Field Roast. Not much to say except, go make these!!!

  • 3/4 cup yellow cornmeal
  • 1 1/4 cup AP Flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup vegan milk
  • 1 flaxseed egg (mix 1 tablespoon flaxseed meal + 3 tablespoons water)
  • 3 frankfurters cut each into 5 pieces


Mix all ingredients, except frankfurters, in a bowl. Mix well until combined.

Cut frankfurters and place each piece in a greased mini muffin tin. Scoop batter into a spoon and pour around each frankfurter piece.

Bake at 400F for 20 minutes. Serve warm with ketchup, mustard, whatever you like.
